Honestly, this dish is a game-changer for busy weeknights; it’s flavorful, comforting, and super simple to make. We’ll need some fragrant basmati rice, chicken thighs or breasts, Greek yogurt, and a few spices like tandoori, turmeric, and garam masala. The fun part? Marinate the chicken, cook up a rich onion and spice base, and then layer it all together with rice to get those amazing flavors in every bite. 🥘 Ingredients:
- 🍲• 2 cups basmati rice, rinsed and drained
- 🍲• 1 lb (450g) chicken thighs or breast, cut into bite-sized pieces
- 🍲• 1 cup plain Greek yogurt
- 🍲• 2 tablespoons tandoori spice mix
- 🍲• 1 large onion, finely chopped
- 🍲• 3 cloves garlic, minced
- 🍲• 1 tablespoon ginger, minced
- 🍲• 1 teaspoon turmeric powder
- 🍲• 1 teaspoon garam masala
- 🍲• 2 cups chicken broth or water
- 🍲• 2 tablespoons ghee or butter
- 🍲• Fresh cilantro and lemon wedges for garnish
👩🍳 Instructions:
- Step 1: In a large bowl, combine the chicken pieces with Greek yogurt, tandoori spice mix, half of the minced garlic and ginger, and a pinch of salt. Marinate for at least 30 minutes to infuse the flavors.
- Step 2: Rinse the basmati rice under cold water until the water runs clear. Set aside.
- Step 3: Heat ghee or butter in a large pot over medium heat. Add the chopped onion and cook until golden brown, about 5 minutes.
- Step 4: Add the remaining garlic and ginger, cook for another minute until fragrant. Then stir in turmeric, garam masala, and a pinch of salt.
- Step 5: Add the marinated chicken to the pot and cook until browned on all sides, about 8 minutes.
- Step 6: Pour in chicken broth or water, bring to a boil, then add the rinsed rice. Reduce heat to low, cover, and simmer for 20 minutes, or until the rice is tender and the liquid is absorbed.
- Step 7: Fluff the biryani with a fork, garnish with fresh cilantro, and serve with lemon wedges for an added zing.
