Happy cooking, and I'd love to hear how yours turns out!"
🥘 Ingredients:
- 🍲• 2 cups mixed leftover vegetables (such as carrots, celery, and onions)
- 🍲• 1 cup stale bread, cubed
- 🍲• 1/2 cup grated cheese (such as cheddar or mozzarella)
- 🍲• 1/4 cup chopped fresh herbs (such as parsley or thyme)
- 🍲• 2 tablespoons olive oil
- 🍲• 1 teaspoon salt
- 🍲• 1/2 teaspoon black pepper
- 🍲• 1/4 teaspoon paprika
- 🍲• 2 cloves garlic, minced
- 🍲• 1/4 cup chicken or vegetable broth
👩🍳 Instructions:
- Step 1: Preheat your oven to 375°F (190°C).
- Step 2: In a large bowl, combine the leftover vegetables, stale bread, grated cheese, chopped herbs, salt, black pepper, and paprika. Mix well until all the ingredients are fully incorporated.
- Step 3: Heat the olive oil in a large skillet over medium heat. Add the garlic and cook for 1-2 minutes until fragrant.
- Step 4: Add the vegetable mixture to the skillet and cook for 5-7 minutes until the vegetables are tender and the bread is toasted.
- Step 5: Transfer the mixture to a baking dish and pour in the chicken or vegetable broth.
- Step 6: Bake the mixture in the preheated oven for 20-25 minutes until the top is golden brown and the liquid has been absorbed.
- Step 7: Remove the dish from the oven and let it cool for a few minutes before serving.
- Step 8: Serve the discard recipe hot, garnished with additional herbs if desired.
💡 Pro Tips:
- 🧂• For a crisper top, broil the dish for an additional 2-3 minutes after baking.
- 🧂• To add some heat to the recipe, add a diced jalapeno pepper to the vegetable mixture.
- 🧂• For a vegetarian version, use vegetable broth instead of chicken broth.
- 🧂• To make the recipe more substantial, add some cooked sausage or bacon to the mixture.
